Recipe of the Month: Many of you have experienced this fun, easy little appetizer when we have visited in each others home. This recipe originated from my pal Linda Frisch, and has been modified a bit to tease my palate. It always receives great reviews!

Cowboy Caviar

In a bowl:

  • 1 can shoe-peg corn, drained
  • 1 can black-eyed peas, drained
  • 1 avocado, sliced
  • 2 roma tomatoes, diced
  • 3/4 cup green onion, chopped
  • 3/4 cup cilantro, chopped
  • Dressing:

  • 1/4 cup evoo (olive oil)
  • 1/4 red wine vinegar
  • 2 cloves garlic, crushed
  • 1 teaspoon cumin
  • salt & pepper to taste
  • Toss it all together and serve with Scoop tortilla chips.
